It's that time of year where we can begin to feel more positive, thinking about longer days ahead and summer holidays. If you have never visited Bermuda now is a very good time to make a booking. Participating hotels are running a special offer to the British under the banner of 'Your island in the sun'. Bermuda is still a British colony and is a short direct flight from Gatwick. Hundreds of miles north of the Bahamas, it is situated in the Atlantic, which means that you can enjoy the benefits of this paradise without the same weather uncertainties as you might experience in the Caribbean. Many of the hotels offer a dine-around programme where you can pay half-board but choose to eat at different hotels - what a great way to eat out without the additional cost.
If you are romantically inclined and want to have an adults only moment then Cambridge Beaches is the only hotel in Bermuda that caters to your needs. They don't allow children on their resort for the majority of the year, special consideration is made at Christmas and Easter though. This allows adults to have time and space to be themselves and indulge in the beauty and activities on offer at Cambridge Beaches. Set in a 30 acre peninsula on the Western tip of Bermuda there's lots of exploring and playing to be done - the kitchen will happily supply a picnic basket to take to your secret spot. My favourite hideaway is Turtle Cove Beach.
Another wonderful place I recently visited was Ladera in St. Lucia an altogether different place but equally beautiful. Set in the West Indies in an old cocoa plantation, Ladera was the first resort to be built with no fourth wall. As strange as this sounds, it is the most exotic experience to lie in a beautiful four poster bed with light nets gently blowing in the warm breeze, where you can watch the sun or moon come up and stargaze until your heart's content. Each room has a staggering view of the Piton Mountains and the azure Caribbean Sea below. There are only 9 villas and 23 suites in this rainforest hideaway and you just owe it to yourself to make a visit one day.
Chef Orlando from Ladera recently visited Le Cordon Bleu School in London to show our up and coming chef's techniques using Caribbean spices to flavour their dishes. Our Jessica Houdret visited to report on this evening and sneaked one of Chef Orlando's recipes, which we hope you will enjoy.
